Rosewater And Nectarine Granita

white nectarines; halved, stones removed, chopped

¼

cup

icing sugar

rosewater

Place nectarines and icing sugar in a food processor. Process until smooth. Transfer to a shallow metal tray.

Freeze for 3 hours or until partially set. Stir with a fork to break up ice crystals. Refreeze for a further 3-4 hours or until set. Once again flake the ice crystals with a fork, then spoon the granita into glasses.
