Combine the water, sugar, rind, juice and ginger in a small saucepan; stir over low heat until sugar dissolves. Bring to a boil; boil, uncovered, 2 minutes. Add nectarines to poaching liquid, reduce heat; simmer, uncovered, about 20 minutes or until nectarines are tender. |

Using slotted spoon, transfer nectarines from pan to two serving glasses. Bring poaching liquid to a boil. Reduce heat, simmer, uncovered, about 5 minutes or until syrup reduces by half. |
